The natural process provides more fruit and fermented flavors, because the bean has more time to interact with the  natural sugars from the cherry as enzymes break down the mucilage surrounding the bean. The result is a distinct flavor profile with more body, a heavier mouth feel, and less acidity. This process is also friendlier for the environment, producing less waste.
